The creation of every great wine begins in the vineyard. The grapes already contain the identity and character of the future Champagne. That's why our winemaking processes are natural, with little intervention.

Fermentation takes place in small stainless steel vats, producing lively, chiseled, airy wines. Our lieux-dits collection develops in vats to give full expression to the "taste of place."
​
Vinification in oak barrels allows micro-oxygenation, bringing complexity, texture and length to the wines. Our Terre d'Abbaye Champagne is vinified entirely in barrels. The other blends contain around 10% wood.
​
The Cuvée musts (first press) are the finest, most aromatic and best suited to aging. They are the only ones used in the composition of our Champagnes. Our tailles (end of pressing) are distilled.

We're developing the family estate in tandem.

In 2017, we launched the construction of our chalk-buried winery to house a modern press, stainless steel thermo-regulated vats and a cellar dedicated to oak barrels. Our state-of-the-art production facilities enable us to carry out high-precision artisanal work.
We conducted our first harvest as a Récoltant-Manipulant in 2018. Our dream of making our own Champagnes became a reality.

The art of aging
Anything worthwhile takes time
We patiently age our wines on fine lees until spring to enhance their aromatic complexity and protect them from oxidation.

Our reserve wines are also kept on lees from one year to the next, using the traditional solera (perpetual reserve) method, which consists of adding successive vintages in a single vat so that the old wines "educate" the young ones.
​
To choose the blends, we blind-taste all our wines, those from the harvest and the reserve wines, in a creative workshop where we choose the best combinations to create the different cuvées.
Bottling takes place in the spring following the harvest. The bottles then mature for many years in our cellars, dug into the chalk to guarantee constant temperature and hygrometry.

Our Extra-Brut dosages < 6 g/L are discreet, to reveal all the nuances of our Champagnes.

Récoltant-Manipulant
We vinify only our own grapes (no outside purchases) and adhere to the Vignerons Indépendants charter. All our work is carried out on the estate, from the arrival of the grapes to shipment in France and abroad.
Gentle pressing without pumping

Our quality-approved press enables the grapes to be gently pressed for 3 to 4 hours. The juice flows by gravity (without pumping) directly into the tanks in the chalk cellar.
Vinification by plot
​
We vinify in small, temperature-controlled stainless steel vats and 300-liter oak barrels to respect the identity of each of our parcels. We work with a minimum of inputs: no charcoal, no bentonite, no fining, and no acidification.
100% Terroir
Our Champagnes come from vines grown without chemical fertilizers, herbicides or insecticides. Each grape is hand-picked at its optimum ripeness.

Local partners
​
We choose local partners. Our vats and barrels are made in France. Our suppliers of bottles, lids, wire hoods, cartons and labels are produced less than 30 km away. Only our corks are made from the finest Portuguese cork.
